Chef Mario Comegna has brought his passion for authentic Italian cuisine to Collingwood for all of us to enjoy. From the moment you walk in the door at Brunello 27 on 4th, located at 27 Fourth Street, you feel like you are in Tuscany. Chef Mario takes us on a step-by-step adventure of making Tiramisu. This recipe makes enough for 12 large portions so if you have a smaller group you may want to cut the ingredients in half but after tasting it, you might find people are asking for seconds.
>1 cup cold espresso
>4 egg yokes
>1 large package of lady fingers
>2 x 500 grams of Mascarpone cheese
>1 cup of sugar
> cup 35% cream
>5oz Tia Maria
>Marsala wine, Cremeva, Rum, Port or Sherry to taste
>10 x 12 inch pan
>Separate egg yokes. Beat egg yokes, add sugar, beat again until pale yellow.
>Add in Mascarpone cheese, blend.
>Add in Tia Maria, blend.
>In a separate bowl, whip cream.
>Add Cremeva (or your choice from above) to cold espresso.
>Working quickly, dip both sides of each lady finger in cold espresso coffee.
>Line the bottom of pan with dipped lady fingers in a single layer.
>Fold Mascarpone cheese mixture with whipped cream.
>Spread half the mixture over lady fingers.
>Repeat with second layer.
>Cover with plastic wrap and refrigerate for at least 3 hours.
>Serve with a shake of coco and some fresh fruit.
